Who said being vegan was hard work? This is an easy recipe and so tasty. This is a great way to get in your spinach as well. Plus if you really like cheese on your pizza feel free to top with feta or mozzarella. Trader Joe’s has these little mini spinach pizza’s that inspired this recipe. If you look at the ingredients it might be easier for you to double up the recipe and make two (I usually do, and I freeze the other one). I hope you like it as much as I do!

Ingredients
- 1 pizza dough
- olive oil for sauteing onions (about 1/4 cup)
- 1/2 large onion, chopped
- 5 oz (142g) frozen or fresh spinach, chopped
- 1 clove garlic, finely chopped
- 1 tomato, finely chopped
- 1 pinch chili flakes
- 1 pinch chili powder
- salt to taste
Directions
Preheat the oven to 400F. Saute the chopped onion over medium low heat until soft and translucent. Add the spinach and cook until most of the excess liquid has been evaporated. Add the finely chopped tomato, garlic, chili flakes, chili powder, salt to taste. This is a ‘mild’ spicy pizza, so if you like spicy you can add a little more chili flakes and/or chili powder. Roll out the pizza dough on a floured surface. I like a thin crust for this particular pizza. Place dough on a pizza stone or cooking sheet. Spread the spinach mixture over the top of the pizza, spread it so that it goes all the way to edge of the dough. I will sometimes top this pizza with crumbled feta, if you choose to do this make sure not to add too much salt to the spinach. Bake at 400F until crust is brown, about 15 minutes. Serve while hot.
